A Week of Pinterest Dinners

I was a little slow to get on the Pinterest bandwagon….but here I am.  I decided early on that I did not want to be a pinner that spent all my time pinning things and no time using the ideas/recipes myself.  So this week I chose my weekly menu from recipes that I have pinned.  My weekly menu was as follows:

Here are the links to each of the recipes and a quick word about each one:

Chicken Kiev & Roasted Potatoes– Chicken was great, moist and very flavorful.  Potatoes are my favorite food, and this recipe did not disappoint.  They had great texture and flavor.  I don’t usually par boil my potatoes before roasting them.  Big improvement.

Spaghetti and Meatballs– This ended up being spaghetti and meat sauce, because the meatballs did not stay together.  Probably operator error.  It made great meat sauce though.

Ham and Bean Soup–I ended up using some smoked turkey that we had in the freezer instead of ham.  The flavors were very good.

Pulled Pork Carnitas–This was my favorite of the week.  I work on Thursdays so I need something quick and easy. This was soooo flavorful.

Menu Planning Board — I LOVE how this looks in my kitchen, and it reminds me of what I need to be taking out of the freezer, etc. each time I walk through the kitchen.

 

I had never tried any of these recipes before.  Each one was Yummy and satisfied this Jones family.  Tonight I am left with about 3 choices in leftovers (which I love!)  Next week, I plan to pull out my cookbooks for my menu plan…that’s right, going old school!
